Coconut Milk Chia Seed Pudding
I spent a good hour writing a post about my feelings on current events and how virtually fucked up everything is but when I was done, I started writing about all the good things that has happened and it balanced out (only in my head though). I am recovering from a cold since my return from Haiti and started an elimination diet recently which isn't helping my emotions but I'll live.
A staple in my kind of elimination diet is coconut milk. I use it for my tea, for my meals and for my snacks. Chia seed pudding is a thing I discovered on Pinterest a while back so when I started the elimination diet, I had to give it a try. It's great on its own but when you add a variety of toppings it's something that you can't quite stop eating --at least in my case.
Yield: 12 servings
- 3 cups coconut milk (approx. 2 cans)
- 3/4 cup chia seeds
- pour coconut milk into a large mixing bowl. If coconut milk has separated (this means you've got great coconut milk!), using a fork or whisk, combine the fats and liquids until the mixture becomes creamy.
- add the chia seeds and stir until mixed well. wait 10 minutes and stir again. place bowl in fridge for 10-20 minutes.
- scoop about 1/3 cup into a bowl and top with fruit, nut/seed butters, honey, etc.
